Meatless May ~ Creamy Avocado Tuna Quesadilla

Hubby loves tomato soup, but I have to have something to go with it.  Once again I dug through my cupboards and fridge, and came up with this tasty dish.

Ingredients:

1 can tuna, drained
1 brick cream cheese room temp, 8 oz
1 small can diced green chilies
1 diced avocado
salt & pepper to taste
cooking spray

Directions:
In a large bowl mix tuna, cream cheese, green chilies, and avocado.  Keep mixing until cream cheese is smooth and covering everything evenly.  Give it a taste test then add salt and pepper as needed.  Spread tuma mixture on 1/2 the side on a tortiall and fold over in half.   Heat up a non stick pan over med-hi heat on the stove and give it a quick hit of cooking spray.  Place quesadilla in pan and cook untill tortilla turns golden brown, usualy 3-5 minutes.  Flip and cook the other side.  Cut finished quesadilla into wedges and serve.
