Mad Scientist in the kitchen continues with Strawberry Kiwi Jam! This has always been one of my favorite flavor combinations.

Ingredients:
2/3 cup finely chopped Kiwi (about 3 Kiwi's)
2/3 cup crushed Strawberries
1 1/2 Tbs Dry Pectin
1 2/3 cup sugar
makes (2) 1/2 pint jars

Directions:
Prep canning materials as stated by manufacturer.
Place Strawberries, Kiwi's and pectin in pot and bring to a boil stirring constantly.  Add sugar all at once and stirring constantly bring back to boil.  Let fully boil for 1 minute.  Ladle jam into jars and place lids and rings on.  Process in water bath for 15 minutes, or in pressure canner for 10 minutes at 10psi.
