April Canning Challenge ~ Recipe 6 of 10: Canned Potatoes

Canning potatoes was surprisingly easy!  I buy potatoes at Sam's Club, and it never fails that I end up tossing a few away.  Now I'll just can some immediately after I buy a bag and not worry about that problem any more. I'll also have pre-cooked potatoes on hand when I want to have mashed potatoes!  This is going to come in handy when it's summer time and I don't to heat up the house.

Lots of Potatoes.  Figure an average of 2 1/3 medium potatoes per pint jar
1/2 teaspoon salt per pint jar (optional)
lots of ice water


Prepare canning materials according to manufacture specifications

Wash and peel potatoes.  To prevent browning immediately place clean potatoes in ice water.  Remove potatoes individually and cut into 1/2-inch chunks and place chunks back into ice water.  Once potatoes are all cut, drain water and refill with more ice water and let soak for 10-15 minutes.  Repeat as necessary until water is clear.  This removes the excess starch from potatoes and will prevent them from turning drown in the jar.  Once water is clear drain potatoes. Cook 2 minutes in boiling water and drain again. Add 1 1/2 teaspoon of salt to the jar.  Fill jars with hot prepared potatoes, leaving no more than 1-inch headspace. Cover hot potatoes with FRESH boiling water, leaving 1-inch headspace and covering all pieces of potatoes.  Do NOT use the water you cooked the potatoes in, it has starch in it and will ruin all that work of icing the potatoes to remove the starch.

Process in pressure canner for 35 minutes at 10 psi.
