April Canning Challenge ~ Recipe 5 of 10: Blackberry Mango Jam

My favorite thing to do with jams is mix up flavors.  To that end, I went to the store, and bought some fruits and berries, and played mad scientist in the kitchen for an entire morning whipping out different combinations of jams.  First up...Blackberry Mango!

1 cup finely chopped Mango (1 med sized mango)
1/3 cup crushed Blackberries (1 6oz. package)
1 1/2 Tbs Dry Pectin
1 2/3 cup sugar
makes (2) 1/2 pint jars

Prep canning materials as stated by manufacturer.  Place mangoes, blackberries and pectin in pot and bring to a boil stirring constantly.  Add sugar all at once and stirring constantly bring back to boil.  Let fully boil for 1 minute.  Lade jam into jars and place lids and rings on.  Process in water bath for 15 minutes, or in pressure canner for 10 minutes at 10psi.
