Green Challenge Recipe 7 of 10 ~ Sauteed Green Peppers



This is a great start to a fajita mix, and you can throw in some yellow and red peppers for a little color variety!  I love green peppers, and this is one of my favorite ways to prepare then.

Ingredients:
2 Green Peppers, sliced
1/2 Medium Onion, sliced
2 Cloves Garlic Minced
1/4 Cup Soy Sauce
3 Drops Liquid Smoke (optional)
1/8 Cup Olive Oil






Directions:
Place all ingredients in a bowl or plastic bag and let marinate for 15-30 minutes.  Warm up a skillet over a med-hi heat and place all ingredients inside.  Stir frequently and peppers are done when most of the liquid has evaporated and peppers are tender, but still firm.  This should take 8-10 minutes.  I'm still adjusting to a new cook top, so be sure to watch your skillet and don't let the peppers burn!
