Green Challenge Recipe 5 of 10 ~ No Bake Lime Cheesecake

I love cheesecake, and was already to heat up the oven and get cracking on a recipe.  Wait...NO EGGS!  How did that happen?  Google to the rescue with no bake (no egg) cheesecake!  On the plus side, now that I know just how easy it is....I'll be making some during the summer months!  All the flavor without heating up the kitchen.

2 - 8 oz bricks Philladelphia Cream Cheese Bricks
1 - can sweetend condensed milk
1 1/3  cup melter butter
2 packages of graham crackers
2 Tbs sugar
1/4 cup lemon juice
1 tsp vanilla excract
green food gel/dye (optional)


Place graham crackers into large re-sealable bag and use a rolling pin to crush crackers into fine crumbles.  Place graham cracker crumbs into a bowl and mix in sugar.  Add in melted butter and stir till well combined. Transfer crumb mixture into large spring form pan, or large pie dish, and press along bottom and roughly 1 inch up the sides (or top of the pie dish).  Place in refrigerator for 10 minutes to chill.  

Filling:  In large bowl mix cream cheese until smooth.  Slowly add in condensed milk, then add lemon juice, vanilla and food gel (Lime cheesecake must be green!), scraping down sides as necessary.  Pour filling into chilled graham cracker crust and smooth top with spatula.  Chill for a minimum of 2 hours before serving.

This lasted a whole 2 days with my family of four.  My daugher saw me working up this post and proclaimed that I need to make another one....IMMEDIATLY!
