Green Challenge Recipe 4 of 10 ~ Asparagus Fried Rice

I love fried rice. It is so easy to make and so many different things you can throw into it. I'm good for using it as a way to clear out leftovers in the fridge.  I make fried rice in a huge pot so that I have leftoveres for the next day.

6 Cups Cooked Rice
2 Cups Diced Ham
1 Pound Asparagus sliced at an angle
1/4 Cup Soy Sauce
6 Eggs
1 Green Pepper Diced
Cooking Oil

In a large pot prepare rice as directed.  Drizzle some cooking oil in a second large pot or very parge skillet and heat up to medium high.  Add in ham, asparagus and pepper and cook until veggiers are just tender (5-10 minutes).  When rice is done cooking, fluff with fork and add soy sauce.  Mix well.  Turn heat up on rice to medium and eggs.  Continulay stir till eggs are incorporated into the rice and fully cooked.  Turn off heat and add asparagus/ham mixture ri rice.  Stir until mixed and serve.
