Green Challenge Recipe 1 of 10 ~ Green Eggs & Ham

Of all the things to start off with the Green Challenge with....Green Eggs & Ham.  What better way to celebrate the birthday of Dr. Seuss?  Aside from the slighly freaked out looks of my family when a plate of green scrambled eggs appeared, it was a hit!




Ingredients:
7 Eggs
1/2 cup diced ham
1/4 cup milk
Green food coloring
salt and pepper to taste



Directions:

In medium sized bowl whisk eggs and milk till well beaten.  Add green food coloring till desired shade of green.  Pour eggs into pre-heated skillet, add salt, pepper and ham.  Scramble up and serve!  Don'tt worry, the food coloring does not chage the flavor or texture of the eggs, just changes the color  :)
