Cupcake Challenge ~ Chocolate Chocolate Chip Cream Cheese Cupcakes






Let me know when you are done drooling over the picture, then we can get to the recipe.  These are a family favorite.  If you want to go REALLY crazy you top it with some whipped cream, or butter cream, or cream cheese frosting.





Ingredients:

Cupcake Ingredients
‎1 1/2 C flour
1 C sugar
1/4 C Cocoa
1 tsp baking soda
1/2 tsp salt
1 C water
1/2 C cooking oil
1 tsp vinegar
1 tsp vanilla

Filling Ingredients:
1 (8oz) cream cheese
1 egg
1/3 C sugar
1/8 tsp salt
1 1/2  Cup chocolate chips


Directions:

Preheat oven to 350 and line cupcake pan.  In large bowl mix together cupcake ingredients until it is a smooth batter.  In smaller bowl combine cream cheese, egg, sugar and salt and mix until smooth (hand held mixer HIGHLY recommended).  Spoon cupcake batter into cupcake liner till just under 1/2 full (row on left).  Drop rounded tablespoon of filling into center and slightly push down (middle row).  Spoon in more cupcake mix over top to just barely cover (row on right).  Bake at 350 for 30 mins.  Let cool before devouring.  This should make about 24 cupcakes in total.

If you want to see more of the filling at the top of the cupcake for presentation, fill liner 1/2 full with cupcake batter and then drop a rounded spoonful of filling in.
