Cupcake Challenge ~ Cheesy Cornbread Muffins

I love chili, and can not think of a better way to compliment some chili than with some cheesy cornbread muffins!  The entire family inhaled the muffins.

Ingredients:
1 Cup yellow corn meal
1 Cup all purpose flour
4 Tbsp Sugar
4 tsp Baking powder
1 tsp Salt
1 Cup Milk
1 Egg
1/4 Cup Oil
1 Cup shredded cheese of choice

(Makes 12 muffins)



Directions:
Preheat oven to 375.  Spray cupcake tin with cooking spray.  In large bowl combine dry ingredients.  Add milk, egg and oil.  Stir until mixed, this will not take long.  Add cheese and stir.  Divide batter evenly into cupcake pan.  Bake for about 20-25 minutes.  Let briefly cool and serve!  To give this some kick, try it with some pepper jack cheese.
