Cupcake Challenge ~ Bacon, Egg & Cheese Biscuit

As much as I love having everyone home on Sunday, I hate cooking breakfast.  I spend a lot of time on my feet and by the time I'm done with all the breakfast goodies, the kitchen is a disaster that I have to clean up.  These breakfast biscuits and quick and easy to make, and don't make the kitchen quite as dirty.

1 Can Pillsbury Home Style Biscuit
4 Eggs
8ish Slices bacon
1 Cup shredded cheese
salt and pepper to taste


Heat Oven to 350.  Spray cupcake tin with cooking spray.  Cut bacon into smallish bits and cook until just done, but not yet crispy (bacon will finish cooking in oven).  Use slotted spoon to remove from pan and place onto paper towels to remove excess grease.  In small bowl thoroughly whisk eggs and salt and pepper together.  Cut 6 biscuits in half, and form a cone so that the ends meet.  With fingers press on dough from the center outwards until it is large enough to fit bottom half of the the cupcake tin (left row)  Spoon enough egg to just cover top of the dough (center row).  Place some bacon and shredded cheese on top (right row).  Bake for about 30 minutes.  Let cool slightly and serve.  I garnished hubbies with some hot sauce and salsa.  I chose a mixture of sour cream and salsa.  Both girls just ate then plane, and loved it.

Oh, those left over biscuits in the can?  I cut them into 1/4 segments, coated them with a cinnamon sugar mixture I had laying around from a past baking experiment, sprayed down a cookie sheet and tossed them into the oven at 350 for 15 minutes.  YUM!
