Slow Cooker Challenge Reflections

My friend Week99er drafted Savvy Saving Couple and myself into a slow cooker challenge....10 slow cooker recipes in 14 days, and by drafted I mean I huffed, fussed and was generally kicking and screaming about this the whole time.  Week99er is just lucky she lives on the other side of the country from me!  So us three gals have been cranking out these recipes over a two week period...OK, it was slightly longer, but we worked hard to get it done before the end of the month.  This has been a great challenge, and amazing learning experience for me and my cooking has gone up a notch.

I learned a few things as I worked my way through my 10 recipes and thought I would share them.  It's hard to mess up a slow cooker recipe.  I know it's possible, but it's pretty hard to mess up when most of the recipes all you do it throw it in and let is sit for hours at a time.  I'm not saying it's IMPOSSIBLE....but it's pretty darn hard.

Nothing is absolute.  Most of the recipes I just made up on the fly with whatever I had on hand in the house. Yes I was all over the internet reading and checking out recipes, but then I would use the information I read and changed it into a recipe that I wanted to try.  One of my friends D was so excited about my Apple Cake recipe, but bummed that she did not have the Lemon Extract.  I fully encouraged her to make it without the lemon extract.  It was something I threw in at the last second because I like a hint of lemon with my apple creations, not one recipe I read had lemon extract in it.  Other recipes I completely made up with whatever I had on hand at home, and they turned out fantastic.

Slow cookers are not just for main dishes and cheese dips.  I loved experimenting and getting creative with the slow cooker.  Between the three of us, we pulled off desserts (most important of course), main courses, side dishes, snacks and soups.  I encourage you look through all the recipes below and try a few out yourself!
