Recipe ~ Slow Cooker Chunky Tomato Soup






I have to laugh.  When I started this recipe in the morning, I was attempting to do a spaghetti/pasta sauce, not a soup.  After a few hours it became evident that my tomatoes were not breaking down the way I though they would, so I immediately started digging though my cupboards to turn it into a chunky tomato soup.  If you love tomatoes, this is the soup for you!







Ingredients:

1 ~ 6 lb can whole stewed tomatoes (found mine Sam's Club)
OR 5-6 cans whole stewed tomatoes
5 ~ Hot Italian Sausage links
1 ~ green pepper diced
1 ~ can evaporated milk
1 ~ 12-16 oz bag/box pasta
salt and pepper to taste
shredded cheese

Directions:

Slice sausage and brown in skillet.  Put whole tomatoes into slow cooker and add browned sausage and diced peppers.  Set on HI for 5 hours.  After 5 hours prepare pasta according to directions on package and add to soup when done, as well as evaporated milk, and salt and pepper to taste.  Top with shredded cheese before serving.  My evaporated milk seemed to curdle in the soup, but it still tasted fantastic.  Hubby wolfed down four bowls.  Leave out evaporated milk to a less creamy soup.
