Bread Machine Banana Bread #Recipe

Despite my hubby's constant reassurances that he LOVES bananas, I always end up with a couple that never get eaten and end up with all the black spots on the outside and then NO ONE wants to eat them.  Enter Banana Bread.  I love being able to dump everything into the machine and walking away.


2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup white sugar
3 tablespoons vegetable oil
2 eggs
2 bananas, peeled and halved lengthwise


Place ingredients in the pan of the Bread Machine.
As bread machines vary, I can only tell you what worked for me.  Be sure to hover over your Bread Machine and use a rubber spatula to push the dough from the sides of the bread pan.  My machine left pretty large deposits of dry ingredients in the corners and I was trying to quickly use my spatula to mix it in as the baking cycle was starting up.

I tried to use the express (60 minute) baking cycle…this was not a long enough bake for me, I had to continue baking for another 20-30 minutes before my bread was done.  My machine has a setting for an 80 minute Express baking cycle, so I will be trying that the next time I make this.

To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is dough on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to assure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.

Yummy, yummy, yummy!  The entire loaf was gone that night!  I'm always excited to try new recipes and discover new favorites.
